我做了三次实习: 第一年的实习是在库尔舍韦勒(Courchevel)四星级雪花酒店(Hotel Des Neiges)服务要求极高的顾客,在这里我很好地了解到了一家酒店是如何运营的,因为在这4个月期间,我在四个不同的部门工作:酒吧、餐厅、前台和客房部。这对我而言是一次极棒的经历,因为我与卓越的经理和高度专业化的团队一起工作,经理与自己的员工非常亲密;你几乎可以说他就像我们的父亲一样。
第二年,我决定去英国(Great Britain)靠近贝辛斯托克(Basingstoke)的一个大型四星级城堡酒店的餐厅实习提高我的英语水平。我在这里发现了一种全新的管理方法,直接倾听下属的意见。当然,我也了解到了很多其他的文化和思想:印度、波兰和俄罗斯。
最后,我通过硕士第一年的实习得到了我现在的工作,那次的实习是与保险业的一名私人投资者一起在塞古埃村(Seguret)进行多美恩卡巴斯酒店(Domaine de Cabasse)的开业筹备工作。所以我有机会参与团队建设、酒店总体组织结构、拟定质量程序、定价等工作。
2013年1月我开始申请在小的三四星级酒店的工作,在我看来,酒店行业意味着个性化的服务,而这是在大中型酒店做不到的事情。
申请工作花了一些时间,但是我最终接到了经度酒店集团(Longitude Hotels Group)旗下一家酒店管理工作的面试邀请。但是很不幸的是那时我无法开始工作,因为我在6个月前就已经决定毕业后在秘鲁呆一个月。这也是一次非常有价值的经历,它使我意识到关于如何接待来到法国的游客所有需要进行改善的地方。当经度酒店集团副经理Ermel先生联系我接管一个管理职位时,我当时正在收拾行李返回法国。两周后,我开始了工作。
桑西城堡酒店是一家拥有21间客房的豪华历史酒店,环境清静怡人,距离巴黎不到40分钟,距离迪斯尼乐园仅仅20分钟。我们有一个美食餐厅,一个室内恒温泳池,一个网球场和一个马厩。但是我们大部分工作重点都在举办专题会议上,因为我们有4间可容纳100多人的会议室。

在当前的情况下,我的目标是超出我的雇主的预期,我很感谢他聘用我进行这份工作。我已经为自己设定了好几个目标:提高顾客满意度,现在已经进行的很好,增加酒店在会议、奖励旅游、大型企业会议和节事活动(Meetings, Incentives, Conventions & Events,MICE)领域的市场份额。
当然,我的长期目标是在法国南部开设自己的酒店。

Less than a year after graduating with his Master’s Degree from Vatel Lyon, Damien Reynaud was hired at the age of only 23 as General Manager of the Chateau de Sancy 4 star luxury hotel, located a 20 minutes’ drive from Disneyland Paris.
This chateau has 21 rooms, a gourmet restaurant, an inside heated pool, a tennis court, a horseback riding center and four conference rooms seating over 100 attendees. A very, very high-responsibility position, that Damien just loves. Let’s have a look at what he says.

“I enrolled in Vatel for my first year of Bachelor’s studies after having graduated from high school with a scientific major. Because I traveled around the world a lot when I was younger and wanted to have professional contacts quickly, this was what really attracted me to Vatel and its curriculum.
I did three internships: in my 1st year in Courchevel, where I was in contact with very demanding customers at the four-star Hotel Des Neiges and where I had a good overview of how a hotel is managed because in four months, I worked in four different departments: Bar, Restaurant, Front desk and Housekeeping. This was a fantastic experience for me because I worked with a highly professional team and an exceptional manager, very close to his employees; you could almost say he was like a father to us.
In my second year I decided to go to Great Britain to improve my English in the restaurant of a large four-star chateau near Basingstoke. What I really remember here is that I discovered a whole new managerial method, directed more to listening to employees. Also, I learned a lot about other cultures and mentalities: Indian, Polish and Russian.
Last but not least, in my first year of my Master’s, I did an internship that allowed me to be hired for my current job: the opening of the Domaine de Cabasse in Seguret with a private investor from the insurance sector. So I was able to take part in the team-building process, the general hotel organization, drawing up quality procedures, pricing, etc.
Then in January 2013 I started applying for jobs in small three or four-star hotels, as the hospitality industry, in my opinion, implies personalized or even individualized services, something that is not possible to achieve in medium-sized or large hotels.
That took me a while, but I was finally contacted for an interview for a managerial job in one of the Longitude Hotels Group’s hotels. Unfortunately I was no longer available, because at that time I had already decided over six months ago to spend a month in Peru after having graduated. A very rewarding experience that also allowed me to realize all the progress that has to be made in France in terms of knowing how to welcome visitors to our country. I just had time to put my suitcases back in France when Mr. Ermel, the deputy manager of the Longitude Hotel Group contacted me for a managerial position. Two weeks later, I started working.
The Chateau de Sancy is a luxury 21 room historic hotel in a calm environment less than 40 minutes from Paris and 20 from Disney. We have a gourmet restaurant, an inside heated pool, a tennis court and stables. But most of our activity is centered on seminars as we have four rooms that can seat over 100.
My daily work consists in managing the hotel’s activity:
- price management,
- headcount planning according to our activities,
- recruitment,
- budgets,
- treasury management,
- putting in place new procedures and
- marketing the hotel, ever more necessary in today’s economic uncertainty.
The advantage of working with a small group like Longitude Hotels is that you have support and your accounting is out-sourced.
In the current situation, my goal is to exceed my employer’s expectations and I’m grateful to him for hiring me for this job. I’ve set several goals for myself: improving customer satisfaction, which is progressing well, and having an increased market share in Meetings, Incentives, Conventions & Events (MICE).
Of course, my long-term goal is to have my own hotel in the south of France.”
